    Quick Low-Fat Blue Cheese Dressing

    The making of Quick Low-Fat Blue Cheese Dressing

    As the days get warmer, or as they were here the other day, plain HOT, thoughts turn more towards cooking outside. If you are lucky enough to have a complete outdoor kitchen (I'm not) well, then you have more options than I do, but I still can keep my cool with a simple grilled steak, Wedge Salad, and some grilled Tuscan bread.

    I don't use iceberg lettuce for much; but I think its unique crunch is required in tacos,  a Classic BLT, and of course, a wedge salad. But the star of a wedge salad is bacon and Blue Cheese Dressing. That's a standard.

    Blue cheese dressings can, of course, be full of fat. So I have been playing for a while now, to come up with a tasty low-fat version, and of course, with it being hot and all, a quick one as well. This Quick Low-Fat Blue Cheese Dressing certainly fits the bill. With only 63 calories per 2 tablespoons and 5g of fat, you can dress your salad without worry. And unlike a store-bought low-calorie dressing, it's thick and full of natural flavor.

    As I said, I've been tweaking this recipe for a while now, trying to get a full, rounded flavor. And I think I've finally succeeded. Using three creamy bases, low-fat mayo (I used Best Foods Low-Fat),  low-fat sour cream, and some 2% buttermilk gives this dressing a very creamy texture that is neither too thick or too thin. I found in the past using fresh garlic made the dressing too harsh and garlicky, so this time I used garlic powder. This added flavor but not none of the harshness. And just a bit of lemon juice gives it some tang!

    And about that quick part...is 5 minutes too much to make your own fresh Quick Low-Fat Blue Cheese Dressing?

    I don't think so.

    This dressing can be held in the refrigerator for up to 7 days. Use it to dress a refreshing Wedge Salad...

    Ingredients
      

    • ⅓ cup low-fat mayonaise
    • ⅓ cup low-fat sour cream
    • ⅓ cup 2% buttermilk plus more if needed for thinning
    • ½ cup blue cheese crumbles
    • 1 tablespoon fresh lemon juice or you could use white balsamic vinegar
    • TECHNICAL STUFF HERE Dash each of: Worcestershire Sauce Tabasco Sauce, garlic powder, onion powder, black pepper
    • Additional blue cheese crumbles if you want it more chunky

    Instructions
     

    • Place all the ingredients into the work bowl of a food processor or blender, and process until mostly smooth. Taste, adjust seasons, and thin with a bit more buttermilk if you want a looser consistency. Stir in additional blue cheese crumbles if desired.
