    The Inspiration for this Fresh Peach Almond Torte Recipe

    Peach season doesn't last long, so when the farmers' market is overflowing with ripe peaches, I look for every excuse to bake with them. This Fresh Peach Almond Torte combines juicy summer peaches with almond meal and toasted almonds for a dessert that's rustic, elegant, and surprisingly easy to make.

    The first version of this torte taught me a valuable lesson: sometimes recipes don't go exactly as planned. Between extra-juicy peaches and a less-than-perfect pan choice, I learned that baking is often about adapting and moving forward. Fortunately, even the "mistakes" were delicious.

    After a few rounds of testing and plenty of willing taste testers, this version became the clear favorite. Moist, peachy, and rich with almond flavor, it's the kind of dessert people ask you to bring again next summer.

    Ingredients
      

    For the Torte

    • 3 tablespoons unsalted butter room temperature
    • 3 tablespoon mild olive oil or other neutral oil
    • 1 cup granulated sugar
    • ½ cup packed brown sugar
    • 3 large eggs
    • 1 teaspoon pure vanilla extract
    • 2 cups peeled finely chopped ripe peaches
    • 8 ounces almond meal about 2 cups
    • ¾ cup all-purpose flour or your favorite gluten-free blend
    • 1 ½ teaspoons baking powder
    • ½ teaspoon pumpkin spice
    • ½ teaspoon salt

    For the Peach Almond Topping

    • 2 tablespoons unsalted butter
    • 2 tablespoon brown sugar
    • ½ cup diced peach
    • ¼ cup toasted slivered almonds

    For Serving (Optional)

    • Fresh whipped cream
    • Additional chopped fresh peaches
    • Powdered sugar

    Instructions
     

    Prepare the oven and pan

    • Heat the oven to 350ºF (176.7ºC)
      Plase a 10-inch seasoned cast iron skillet or cake pan into the oven while your prepare the batter.

    Make the batter

    • Heat oven to 350°F. 
      Using a hand mixer or stand mixer, cream together the butter, oil, granulated sugar, and brown sugar until light, smooth, and creamy, about 2 minutes.
      Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
      Add the finely chopped peaches and mix at low speed until just incorporated.
      Stir in the almond meal until well blended.
      In a small bowl, mix together the flour, baking powder, pumpkin spice, and salt. Add the the batter and mix until just combined. Do NOT overmix.

    Prepare the peach almond topping.

    • Carefully remove the skillet or cake pan from the oven.
      Add the butter and brown sugar, stirring until the butter melts and the sugar begins to disolve.
      Scatter the diced peaches over the bottom of the pan, then sprinkle with toasted almonds.
      Return the pan to the oven and cook, about 10-minutes, until the sugar mixture is bubbling and beginning to caramelize.

    Bake the torte

    • Spread the batter carefully over the peach-almond topping.
      Bake for 35 - 50 minutes, or until the center springs back lightly when toughed and a toothpick inserted near the center comes out clean.

    Cool and serve

    • Allow the torte to cool in the pan for 10 minutes.
      Run a knife around the edge, then carefully invert onto a serving plate. If a few peaches stick to the pan, simply place them bak on top of the torte.
      Cool to room temperature before serving.
      Dust with powdered sugar, if desired.
      Serve with fresh whipping cream and additional diced peaches, optional.

    Notes

    Very juicy peaches may increase the baking time, check at 35 minutes.
    The torte can be served upside down or right side up. Both are delicious.
    Store at room temperature for up to 2 days, refrigerate for longer storage.

    Peaches vary in juiciness

    • Extra juicy peaches may require an additional 5 to 15 minutes of baking. 

    Don't rush the inversion

    FAQs

    Is a torte the same as a cake?

    While the terms are sometimes used interchangeably, a cake and a torte are not quite the same thing.

    Traditional cakes rely heavily on flour, which creates a lighter, fluffier crumb. Tortes, on the other hand, use little flour and often incorporate ground nuts, nut meals, or even breadcrumbs. The result is a denser, richer texture with a more pronounced flavor.

    Can I use almond flour instead of almond meal?

    No. Almond meal is a key ingredient in this recipe and helps create the dense, rustic texture that defines a torte. Almond flour is much finer and will produce a softer, more cake-like result.

    If you use almond flour, you'll still have a delicious dessert, but it won't be the same Fresh Peach Almond Torte.

    What if I can't find almond meal?

    No problem. Almond meal is easy to make at home and often less expensive than buying it pre-ground.

    Measure 8 ounces of whole almonds and pulse them in a food processor until they resemble a coarse meal. Be careful not to overprocess, or you'll end up with almond butter instead.

    For even more almond flavor, lightly toast the almonds before grinding. Allow them to cool completely before processing.

    Can I use frozen peaches?

    Yes, although fresh peaches will provide the best flavor and texture. Thaw the peaches completely, then pat them dry with paper towels before using.
    Frozen peaches tend to release more liquid than fresh peaches, which can increase the baking time and make the finished torte slightly softer.

    If using frozen peaches, begin checking for doneness at the recommended baking time, but don't be surprised if the torte needs a few extra minutes in the oven.

    How ripe should my peaches be?

    Choose peaches that are ripe, fragrant, and yield slightly to gentle pressure. They should be sweet and juicy, but not so soft that they're falling apart when peeled or chopped.

    Very firm peaches won't develop as much flavor during baking, while overly ripe peaches can release excess juice and make the torte softer and slower to bake.

    If your peaches are exceptionally juicy, don't worry. The torte will still be delicious, but it may need a few extra minutes in the oven to fully set.

    Can I make this torte in advance?

    Yes. In fact, many people find the almond and peach flavors meld beautifully after a few hours or overnight. Store covered at room temperature for up to 2 days or refrigerate for longer storage.
