Skip the take-out and its hidden fats and sodium. This Quick Low-Fat Beef Broccoli Stir-Fry delivers fresh, bold flavor at home—less sweet, a little spicy, and on the table in under 30 minutes. For a gluten-free version, use gluten-free soy sauce.
8ounceslean beef (boneless top sirloin flank or New York)thinly sliced across the grain
3large garlic clovesminced
1teaspoonminced fresh ginger
1tablespoonlow-sodium soy sauce
1tablespoondry sherry or sake
½ teaspoontoasted sesame seed oil
2teaspoonscornstarch
For the Sauce
¼cupplus 2 tablespoons dry white wine or white vermouth
¼cuplow-sodium soy sauce
1teaspoonchili garlic sauce
1teaspoon rice wine vinegar
1teaspooncornstarch
For the Stir-Fry
1tablespoonneutral oil, such as grapeseed
1red bell pepper, large diceabout ¾ cup
2cupsbroccoli florets, bite-sized

For the Garnish
toasted sesame seeds

Instructions
Marinate the Beef
In a bowl, whisk together the marinade ingredients. Add the beef, toss to coat, and set aside while you prepare the sauce and vegetables.
Mix the Sauce
Combine all sauce ingredients in a small bowl. Set aside.
Prepare an Ice Bath and Blanch the Broccoli
Bring a small amount of lightly salted water to a boil in a wok or skillet. Add the broccoli and cook about 1 minute until bright green.Remove immediately to an ice bath to stop cooking.
Cook the Beef
Heat half the oil in a wok or large skillet over high heat. Add the beef with marinade and stir-fry for about 2 minutes until just beginning to cook.Remove and set aside.
Stir-fry the Vegetables
Add remaining oil, then the bell pepper. Cook 1 minute until crisp-tender.
Finish the Dish
Return the beef to the pan. Add the sauce and stir-fry quickly until the sauce lightly thickens and coats everything. Return the broccoli and toss until well coated.
Serve
Serve over hot rice, if desired, and garnish with sesame seed, and/or sliced green onions.
Notes
This recipe was written for two, but could easily be doubled, tripled, or more!Adding the blanched broccoli to the already prepared dish keeps it crisp and vibrant. If you prefer softer broccoli, add it when you add the meat and sauce.
