Ingredients
  

  • 3 cups peeled and diced fresh peaches about 4 medium peaches
  • 1 tablespoon unsalted butter
  • 1 tablespoon brown sugar or as needed
  • 1 teaspoon fresh lemons juice
  • ¼ teaspoon cinnamon
  • pinch of salt
  • ¼ teaspoon vanilla extract

Instructions
 

Cook the peaches

  • Melt the butter in a saute pan over medium heat.
    Add the peaches, cinnamon, and salt. Cook, stirring occasionally, until the peaches begin to soften and release their juices, about 3 - 4 minutes.

Finish the compote

  • Stir in the lemon and brown sugar. Continue cooking for 1 to 2 minutes, just until the juices become slightly syrupy.
    Remove the compote from the heat and stir in the vanilla.
    Serve warm over waffles, pancakes, or your favorite sweet treats.

Notes

Use ripe, but not overripe, peaches. 
For extra texture, reserve some of the diced peaches and add them after cooking.
Peaches vary in sweetness, taste, and adjust the brown sugar accordingly.
