This easy Fresh Peach Compote transforms ripe summer peaches into a versatile topping that's delicious on waffles, pancakes, yogurt, oatmeal, cheesecake, ice cream, and more.
3cupspeeled and diced fresh peachesabout 4 medium peaches
1tablespoonunsalted butter
1tablespoonbrown sugaror as needed
1teaspoonfresh lemons juice
¼teaspooncinnamon
pinch of salt
¼teaspoonvanilla extract
Instructions
Cook the peaches
Melt the butter in a saute pan over medium heat.Add the peaches, cinnamon, and salt. Cook, stirring occasionally, until the peaches begin to soften and release their juices, about 3 - 4 minutes.
Finish the compote
Stir in the lemon and brown sugar. Continue cooking for 1 to 2 minutes, just until the juices become slightly syrupy. Remove the compote from the heat and stir in the vanilla.Serve warm over waffles, pancakes, or your favorite sweet treats.
Notes
Use ripe, but not overripe, peaches. For extra texture, reserve some of the diced peaches and add them after cooking.Peaches vary in sweetness, taste, and adjust the brown sugar accordingly.
