2large cucumbers, peeled, seeded, and choppedabout 3 cups
2scallions (green onions), coarsely chopped

Instructions
Add the cucumbers, scallions, jalapeño, and Greek yogurt to a blender or food processor. Blend until completely smooth. (If your blender isn't high-powered, press the soup through a fine-mesh sieve for an extra silky texture.)
Season with salt, pepper, and fresh lemon juice to taste.
Cover and refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill thoroughly.
Ladle into chilled bowls. Finish with your choice of garnishes. I
