Ingredients
  

  • 2 large cucumbers, peeled, seeded, and chopped about 3 cups
  • 2 scallions (green onions), coarsely chopped
  • ½ cup jalapeño pepper, seeded and minced taste a small piece first to understand the heat factor.
  • 1 ½ cups non-fat Greek yogurt
  • Kosher salt and freshly ground pepper to taste
  • fresh lemon juice to taste

Finish Your Bowl (Choose one or more of the following to finish your bowl:)

  • Finely diced cucumber
  • Diced avocado
  • Lemon Greek Yogurt, or plain Greek Yogurt mixed with.a bit of lemon juice
  • Fresh lump meat crab
  • Baby (Salad) shrimp
  • Fresh mint leaves, or fresh dill sprig torn or sliced
  • Fresh lemon zest
  • Quality Extra Virgin Olive Oil

Instructions
 

  • Add the cucumbers, scallions, jalapeño, and Greek yogurt to a blender or food processor. Blend until completely smooth. (If your blender isn't high-powered, press the soup through a fine-mesh sieve for an extra silky texture.)
  • Season with salt, pepper, and fresh lemon juice to taste.
  • Cover and refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill thoroughly.
  • Ladle into chilled bowls. Finish with your choice of garnishes. I

Notes

 

  • Taste your jalapeño before adding it. Their heat can vary from very mild to surprisingly spicy, so adjust the amount to suit your taste.
  • Chill for at least 1 hour. The flavors meld and the soup becomes even more refreshing as it chills.
  • Blend until silky smooth. For an extra-smooth texture, strain the soup through a fine-mesh sieve if your blender leaves any bits behind.
  • Taste before serving. A final squeeze of fresh lemon juice and a pinch of salt can brighten the flavors after chilling.
  • Serve well chilled in chilled bowls for the best flavor and presentation.
