Heat the oven to 400° F. Line a cookie sheet with foil, lightly oil or spray with cooking spray, and place in the oven to heat. Meanwhile, peel and cut the potatoes into wedges or ½ inch "fries". * Toss with olive oil then season with salt and the chipotle chili powder, if using. Place in a single layer on the preheated cookie sheet and bake for 20 - 25 minutes, stirring once or twice or until browned and crisp. Serve hot.
Variations: 1. Omit optional chipotle chili powder and use taco seasonings. 2. Use pumpkin seasoning in place of optional chili powder.
Notes
Do not crowd the pan. Allow enough room for the moisture to dissipate so the potatoes crisp instead of steam.
