Coffee-Rubbed Cheeseburgers with Texas BBQ Sauce

The coffee rub really gives the burger an interesting flavor, the Texas BBQ sauce is um doggies good, the rest of the ingredients are a no-brainer.

Ingredients
  

  • Coffee Rub
  • 1 tablespoon finely ground fresh coffee or espresso
  • 2 teaspoons packed brown sugar
  • 2 teaspoons freshly ground coarse black pepper
  • ½ teaspoon ground coriander
  • ½ teaspoon oregano leaves crushed between your fingers
  • ½ teaspoon kosher salt
  • Burgers
  • 4 slices applewood-smoked bacon
  • 1 ½ pounds ground beef use 80/20 for best results
  • 4 slices cheddar cheese
  • 4 hamburger buns preferably whole grain
  • red onion slices
  • Sliced dill pickles
  • tomato slices optional
  • lettuce optional
  • Texas BBQ Sauce
  • 1 tablespoon extra virgin olive oil
  • ¼ cup finely chopped onion
  • 1 cup ketchup
  • cup packed brown sugar
  • cup Worcestershire sauce
  • Squeeze fresh lemon juice
  • 1 chipotle chili from canned chipotle chilies in adobo minced, with seeds
  • ¼ teaspoon ground cayenne

Instructions
 

  • Prepare the Coffee Rub Place all the ingredients in a bowl and combine well. You will not use all of this to make the burgers, so save whatever you don't use in a tightly sealed jar to use at another time.
  • Prepare the BBQ Sauce: Saute the onions in the oil about 30 seconds, then add the remaining ingredients. Bring to a boil; reduce heat to medium-low and simmer, stirring occasionally; about 5 - 10 minutes. Taste and season with salt and pepper. Set-aside. 
  • Prepare the Burgers: Cook the bacon in a skillet until crisp. Place on paper towels to drain. Break in half. Form the hamburger into patties. Using your thumb make a slight indentation in the middle of each burger (this helps ensure a flat burger).
  • Prepare the grill to medium-high heat. Sprinkle 1 teaspoon of the rub onto each of the burgers, place rub side down onto the grill and grill about 4 minutes; turn and cook about 2 minutes. Place the bacon slices on each burger (2 halves) and then top with the cheese, cover and cook until the cheese is melted. Toast the buns on the grill if desired, then top with the burger. Dress your burger with your desired condiments, then top with a dollop of Texas BBQ sauce. Close the bun and serve.
