Grilled Albacore Roast with Curry Mustard Sauce

  • 1 albacore tuna roast about 1 - 1 /2 pounds OR 4 tuna steaks cut at least 1 ½ inches thick
  • For the Marinade
  • ¼ cup olive oil
  • ¼ cup low sodium soy sauce I'll say it and say it, you really never need full sodium soy, it's way too salty
  • cup fresh orange juice
  • 2 tablespoons fresh grated ginger or 2 teaspoons dry
  • 1 teaspoon palm sugar honey, or regular sugar
  • For the Curry Mustard Sauce
  • ½ cup Dijon mustard
  • 1 - 2 teaspoons curry powder taste after 1, add more as desired
  • 1 teaspoon honey
  • 2 teaspoons grated orange zest
  • 2 tablespoons fresh orange juiceFor the Rest
  • 1 russet potato cut in half
  • cup fresh cilantro leaves to garnish, optional
  • And of course salt and freshly ground pepper


  • Marinate the Fish: Combine the marinade ingredients together in a large zip-top bag. Add the fish. Squeeze as much air out as possible; then refrigerate for 2 - 4 hours.
  • Prepare the Curry Mustard Sauce: Mix the mustard sauce ingredients together in a small bowl; add salt and pepper to taste. Set aside.
  • Prepare the grill, gas, charcoal, grill pan, to high. Remove the fish from the marinade. Season with salt and freshly ground pepper. Rub the grates with the cut side of the potato, then add the tuna, grill, about 3 minutes per side, leaving the center pink. DO NOT OVERCOOK. 
  • Slice the fish and serve with some of the mustard sauce. Garnish with cilantro leaves, if desired. 
  • You may not need all of the mustard sauce, but it's great on sandwiches too
