This recipe for Grilled Albacore Roast with Curry Mustard Sauce a delish and easy to prepare. An albacore tuna roast is marinated and then grilled to a perfect rare. Perfect!
1albacore tuna roastabout 1 - 1 /2 pounds OR 4 tuna steaks cut at least 1 ½ inches thick
For the Marinade
¼cupolive oil
¼cuplow sodium soy sauceI'll say it and say it, you really never need full sodium soy, it's way too salty
⅔cupfresh orange juice
2tablespoonsfresh grated gingeror 2 teaspoons dry
1teaspoonpalm sugarhoney, or regular sugar
For the Curry Mustard Sauce
½cupDijon mustard
1 - 2teaspoonscurry powdertaste after 1, add more as desired
1teaspoonhoney
2teaspoonsgrated orange zest
2tablespoonsfresh orange juiceFor the Rest
1russet potato cut in half
⅓cupfresh cilantro leavesto garnish, optional
And of coursesalt and freshly ground pepper
Instructions
Marinate the Fish: Combine the marinade ingredients together in a large zip-top bag. Add the fish. Squeeze as much air out as possible; then refrigerate for 2 - 4 hours.
Prepare the Curry Mustard Sauce: Mix the mustard sauce ingredients together in a small bowl; add salt and pepper to taste. Set aside.
Prepare the grill, gas, charcoal, grill pan, to high. Remove the fish from the marinade. Season with salt and freshly ground pepper. Rub the grates with the cut side of the potato, then add the tuna, grill, about 3 minutes per side, leaving the center pink. DO NOT OVERCOOK.
Slice the fish and serve with some of the mustard sauce. Garnish with cilantro leaves, if desired.
You may not need all of the mustard sauce, but it's great on sandwiches too
