Tangerine Chipotle Sweet Potato Mash is a perfect combination of spicy sweet flavors that will enhance any meal. Perfect with BBQ or simple grilled meats or game.
2large or 4 small sweet potatoes cubedabout 6 cups cubed
1 - 2tablespoonsunsalted butter
¼ - ⅓cupfresh squeezed tangerineor orange juice, to taste
1teaspoonzestzest first, squeeze second
1 - 2tablespoonspure maple syrupto taste
½ - 1teaspoonchipotle pepper powderto taste
Salt and freshly ground pepperto taste
Instructions
Place the cubes of sweet potato in a steamer basket and steam over boiling water until soft, about 7 - 10 minutes depending on how big the chunks were. Drain the water and return the potato to the hot pan, add the butter and begin to mash. Add ¼ cup juice along with the zest, maple syrup, chipotle pepper, pinch of salt and pepper. Mash until you have the consistency you desire, from slightly chunky to smooth. Taste and adjust for seasonings adding more juice, syrup, or chipotle as desired.
